China is the country with the fastest growth in the output of edible fungi in the world. In recent years, the output and output value of edible fungi in China have undergone great changes. According to the statistics of China Edible Fungi Association, the output of edible fungi in China was less than 100,000 tons in 1978, and the output value was less than 1 billion yuan. By 2021, the production of edible fungi in China reached 41.8985 million tons, and the output value reached 369.626 billion yuan. Edible mushroom industry has become the fifth largest industry in China’s agricultural planting industry after grain, vegetables, fruit trees and oil.

2. China edible fungus industry development status report.
Under the influence of national and local agricultural policies, edible fungus industry develops rapidly, but the proportion of factory transformation is not high. According to the China Edible Fungi Association, the proportion of edible fungi being manufactured in factories in China has been on the rise from 7.15 percent in 2016 to 9.7 percent in 2020, an increase of 2.55 percentage points. As the China Edible Fungus Association has not released the 2021 National Edible Fungus Statistical Survey results analysis, its factory proportion in 2021 is not disclosed, but it is predicted that the factory proportion of edible fungus in 2021 is 10.32%. As a result, the factory culture of edible fungus has entered the rapid development stage. 3. The impact of COVID-19 on edible mushroom industry
The outbreak of COVID-19 has led to more obvious and prominent trade barriers to food safety in all countries, which is both a challenge and an opportunity for the edible mushroom industry. Edible fungus product as the world’s recognized health food, often feed can improve human immunity against viruses, but also has obvious dietotherapy effect, by consumers at home and abroad, especially in our country, the next step will be to increase of agricultural straight for poverty alleviation, consolidate the achievements of poverty and achieve rural revitalization, during the period of “difference” domestic consumption will increase rapidly. With the continuous escalation of the trade war, China’s import and export trade policies will be constantly adjusted and improved. After the 14th Five-Year Plan is concluded, the export trade of domestic agricultural products will rapidly become equal to the import. However, edible mushroom products have gradually become global consumer health food, with a large demand gap. The repeated COVID-19 epidemic has a great impact on logistics, consumption, especially the catering industry, leading to the depression of the demand end of the whole market and the overall downward trend of edible fungi. At the same time, the price increase of bulk commodities brought about the rise of raw material market prices, under the adverse impact of both markets, the performance of edible mushroom enterprises seriously declined, and the overall profitability of the edible mushroom industry dropped significantly. From 2017 to 2020, the gross margin of edible fungi of key enterprises in China basically remained stable, especially in 2019 and 2020, the difference between the gross margin and the gross margin of the four enterprises was very close, and 2021 was difficult for the whole edible fungi industry. In 2021, Zhongxing edible fungus gross margin was 18.51%, down 9.09% from last year, Ficus tree gross margin was 4.25%, down 16.86% from last year, Hualu biological gross margin was 6.66%, down 20.62% from last year, Wanchen biological gross margin was 10.75%, down 17.11% from last year.
